No glutinous rice flour, no cooking, no steamer. These homemade mochi come together with four sheets of rice paper, Greek yogurt and chopped fruit — five ingredients, about fifteen minutes of prep, and that soft, chewy texture you want from a mochi.

Ingredients

  • 4 sheets of rice paper
  • Greek yogurt (your choice — I used vanilla)
  • Chopped fruit (your choice — I used mango and strawberries)
  • Cornstarch or rice flour
  • Icing sugar

Instructions

  • Soak a sheet of rice paper in water until it's pliable
  • Spoon a little yogurt into the centre, add a few pieces of fruit, then top with a little more yogurt
  • Gently fold the rice paper closed, as tightly as you can
  • Wrap the mochi in a second sheet of rice paper to double the thickness
  • Let it rest on a plate for a few minutes, then dust with cornstarch and icing sugar
  • Freeze for 45 minutes before serving, or simply refrigerate
